All of these apply to my interpretation of Break in the very canon manga, as well.


age.
More of maths than anything, but Break is stuck in the body of a 24-year old, having lived 40, although he should be around 70.

cane.
The cane is specifically made for Break and was probably Shelly or Cheryl's idea when they learned of his background. Since Break is more of a knight to the Rainsworth house than a normal servant and because they deal with dangerous things on regular basis, a weapon would be a good idea. But while he is an agent of Pandora, he's still just a servant to everyone else, and it just wouldn't do for a mere servant to haul a sword around (it probably isn't that acceptable for a noble, either). So hiding it in a cane was the perfect solution.

cats.
Break isn't big on animals, but if he has to deal with them, he'd rather they not be cats. He's not felinophobic like Gilbert, but cats just always remind him of Cheshire and the moments he spent in the Abyss with it and its mistress - and seeing as that encounter left him half-blind (and this version also mute), he'd rather not be reminded of it.

emily.
I'm with the part of the fanbase that believes it's a gift from Sharon - apparently she is bad at sewing, and the truth is she appreciates her brother Xerx very, very much~ And being the lunatic he is of course he would appreciate a gift from the daughter of his mistress ♥
As for the name, I'm convinced it comes from the small Sinclair girl who was the only one to survive in the first timeline, making Emily the doll little Emily Sinclair's namesake.

height.
Break is exactly 177.5cm tall, and that half a centimeter seems to be Very Important to him for some reason. Now, Vincent is 177cm...
I believe this is self-explanatory.

music.
His voice is normally rather singsong-y, so I'd imagine he'd also be able to sing at least decently plus, the mental image is hot. He just doesn't, often - and in the case of this very version, he can't anymore.
I'm also convinced that Sharon and/or Shelly would have taught him to read sheet music, at least a little bit, and play something simple like piano or whatnot (because let's face it, it was common in that era for nobility to learn to play. Never mind that he's not exactly nobility, but when has that ever stopped him or his protectors?). However, that doesn't mean he's very good at it.
Plus, the Hatter from Alice in Wonderland is apparently able to sing ♥

name.
Will of the Abyss's wish, the one she wanted Break to fulfill, is to make her not be the Will of the Abyss any longer. After that, he utters the word "break" many times. This may mean that she has to be broken, i.e. killed for her wish to come true, but that is not my point. What I believe is that Break chose the name "Break" because of her and those words, to remind him every single day of the promise he's made.
Never mind that the English and Japanese don't exactly add up, but this is Mochizuki Jun. She knows enough English and would totally do something like this.

sleep.
Break is not a heavy sleeper. Due to his professions, first as a knight, the as a wanted criminal, and now as a more or less a mixture of those, he really can't. Him sleeping deeply and not waking to the smallest sound is a clear sign of something being wrong.

sugar.
Break ♥'s his sugary treats, yes? Actually, I can't recall him ever eating anything else onscreen. Not once. I also have a theory about it. With all the sugar and extra energy he consumes, he should be notably overweight or at least have diabetes, right? Well, to me it seems he instead keeps getting thinner (or then it's just the manga style, which I doubt. Other characters seem to be just fine, while he is nothing but skin and bones.)
My theory is that his body requires more energy than he can consume - whether it's that his Chains consume it or just the constant stress of having to stay alive for still another day, or whatever, it might even be a combination.
I am also convinced he somehow picked this habit up from Will of the Abyss. (How do we go about that making sense, I don't know.)

temperature.
Cold hands. Break is dying: that is undoubtedly true. He's also old. Therefore I think his circulation would have weakened somewhat, and his limbs would be cold. Plus, I suffer from poor circulation too, so I can relate.
And mun loves the "Break is a snowflake" metaphor. White! Cold! Light! Pretty! Dancing! Dying! And anyway, was we know, snow means death.

victim count.
The victim count of Kevin "the Red-Eyed Ghost" Regnard is, according to Rufus Barma, 116. This is obviously true according to official records, but I'm convinced that in Break's head, he adds one more to the total so it become 117. That one is, of course, the little Sinclair girl he failed to protect and who ended up dead with the rest of her family because of his selfish actions.
